Sodium Alginate is the sodium salt form of alginic acid and gum mainly extracted from the cell walls of brown algae, with chelating activity. Alginates are known for their liquid–gel behavior in aqueous solutions. It is also widely used in molecular gastronomy. It is a white powder, odorless and tasteless, slowly soluble in water forming a viscous solution.
