The Craftsmanship

• Traditional Sun-Drying: Even in our bulk lots, we prioritise traditional methods. The cherries are spread across expansive drying yards in the Western Ghats and manually turned to ensure even dehydration. This sun-drying process prevents the "chemical" taints often found in machine-dried commercial coffees, preserving a clean, rustic flavour.

• Shade-Grown Pedigree: Sourced from agroforestry systems in the Western Ghats, these beans mature under a natural forest canopy. This slow-ripening environment ensures that even the smaller beans in our bulk lots possess the high density and oil content required for a consistent extraction.

• Standardised Quality Control: Our bulk Robusta Cherry is mechanically cleaned and passed through modern colour sorters to ensure the removal of black beans and foreign matter. This rigorous industrial sorting guarantees a stable, "clean" quality that meets the strict physical and safety compliance standards of global institutional buyers.
