Naturally bile and their salts paly an important role in animals for dissolving fat or oil in water by the process of emulsification which also accelerates the oil digestion. But in case of chicken they do not get enough time for fat or oil digestion because of their complex structure, poor bile secretion and less feed passage time in the gut, which leads to poor performance. Bile salts are not adequately produced hence feed need to be supplied with modified bio surfactants to supplement bile salts.
