The Bharwa Lal Mirch Achaar is a recipe that’s as traditional and ancient as the bylanes of Varanasi. It’s comfort food and one of the most common types of pickle made in this storied city. Our recipe is one that has been passed down through generations of women and we honour it by using a special variety of zingy red chillies available only in the month of February. We even source our chillies only from Varanasi to preserve every bit of the taste as well as culture associated with it. We take the blend of spices including dry mango powder, fenugreek seeds, and mustard seeds and soak them in mustard oil. The chillies are, meanwhile, dried slowly and naturally in the sun to bring out its inherent pungency.
